Ingredients
  

  • 1 cup dates
  • 2-3 ripe bananas, mashed
  • 2 tbsp nut butter almond or peanut butter both work great!
  • 1 cup oats
  • 1/2 cup tigernut, almond, oat or other flour of choice, plus a little extra so your dough isn't sticky when you roll it 🙂

Optional add-ins

  • 1/4 cup optional add-in, e.g. raisins, cranberries, chocolate chips, pumpkin seeds, almond flakes, coconut flakes, sunflower seeds or cashew pieces I used a mixture of sunflower seeds and cashew pieces

Instructions
 

  • Soak dates in warm water for 10 minutes and then drain.
  • Blend dates in food processor or high speed blender.
  • Mash your bananas in a small bowl.
  • Combine dates, bananas, nut butter, oats and flour in large mixing bowl.
  • Add any optional add-ins.
  • Chill dough for 10-20 mins in the fridge.
  • Heat oven to 350F/180C.
  • Cover large baking trays with parchment cover. Take about 1.5-2 tablespoons of dough and roll into small balls on parchment covered baking sheets. Lightly press down with your hands to form little chunky circles. They won’t really spread while baking so make them pretty 🙂 These cookies will be thick + chewy – so if you prefer something crispier this is not your recipe! You could try flattening them by lightly pressing down with a glass before baking but I haven’t done this before 🙈
  • Bake for about 12 mins or until slightly golden. Cookies will continue to crisp up on the sheet once you remove them from the oven, so make sure you keep a close eye 🙂
  • Enjoy!! I recommend keeping these refrigerated. You can also freeze any extras 🙂
