vegan + gluten free tigernut super seed bread
This tigernut super seed bread is vegan, gluten free and d-e-l-i-c-i-o-u-s! It’s made with tigernut flour which:
- is naturally sweet (meaning you don’t need to use as much sugar or sweetener in your recipes)
- has a high level of resistant starch promoting prebiotic growth and also supporting a healthy digestive system
- is also a good source of calcium and zinc
This bread is also perfect for meal prep – love having easy and healthy snacks on hand for the week!

Ingredients
- 1 1/2 cups tigernut flour
- 1 cup rolled oats
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/4 cup golden flaxseed
- 1/4 cup chia seeds
- 1/2 tsp salt
- 2 tbsp honey, maple syrup or agave nectar
- 3 tbsp coconut oil
- 1 1/2 cups water
Instructions
- Combine all ingredients in large bowl, adding water last.
- Let the dough sit for at least 3 hours or overnight.
- Spread dough evenly on standard sized loaf tray covered with parchment paper.
- Optional: sprinkle with extra seeds.
- Bake at 350F / 180C for 40 minutes or until golden brown. If you need to cook it longer than this, I suggest covering with tinfoil so the top does not burn. Note that the bread will not rise in the oven – this is normal!
- Let the bread cool completely before slicing and serving. Refrigerate for up to one week or pre-slice before freezing.
