Ingredients
  

Tofu scramble

  • 1 block firm tofu, drained to drain, simply wrap tofu block in towels a couple of times and gently press excess water out; I recommend buying organic tofu where possible
  • 1 tbsp olive oil
  • 2 tbsp almond or other non-dairy milk
  • 1 tsp minced garlic
  • 1/4 tsp turmeric
  • sprinkle of salt + pepper

Wrap + filling

  • 4 gluten free wraps
  • 2 cups spinach
  • 1 red bell pepper
  • 1/4 cup sliced red onion
  • 1 cup baby tomatoes, sliced

Instructions
 

Tofu scramble

  • Place tofu in bowl and gently mash until it forms a crumble-like texture.
  • Place pan on medium heat and add olive oil, then tofu. Cook for 3-5 minutes, making sure you move the tofu around frequently to avoid sticking.
  • Add garlic, turmeric, salt and pepper and cook for an additional 5 minutes until tofu is starting to lightly brown.
  • Add milk and combine evenly before removing pan from heat.

Wrap

  • Assemble by placing your wrap on cling film or tin foil (if you are meal prepping, otherwise on a large board or plate).
  • Add your filling ingredients in the centre widthwise, with about 1/3 of the wrap left at the end closest to you. Pick up the end closest to you and gently wrap it over your filling. Gently tuck in the ends and finish wrapping!
