I love when I have a colourful plate full of fresh veg because it means I’m getting lots of nutrients in! Also, who doesn’t want their food to look pretty? These are super easy to make and also something you can meal prep! If you make a big batch they’d also be perfect for hosting 🙂

Ingredients
Roasted cauliflower
- 1 head cauliflower
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp cilantro / coriander feel free to omit if you're like my boyfriend and think cilantro tastes like soap 🙂
- 1/2 tsp salt
Tacos
- 8 small soft or crispy gluten free corn tortillas or other tortilla of choice
- 1 cup grated beetroot or shaved purple cabbage
- 1 cup grated carrot
- 2-3 avocados, peeled and thinly sliced
- 1/2 cup sliced radish
- 1/2 cup fresh cilantro / coriander
- sprinkle of salt + pepper
Instructions
Roasted cauliflower
- Cut one head of cauliflower into small pieces and place in large mixing bowl.
- Toss cauliflower with olive oil, cumin, cilantro and salt.
- Place cauliflower on large parchment covered baking sheet, and bake at 350F/180C for 20-25 minutes until cooked through.
Tacos
- Optional: Heat taco shells in microwave (about 15-30 seconds) or oven (about 1-2 minutes) until warm.
- Add your filling ingredients (including roasted cauliflower) and enjoy!
