easy peasy lemon squeezy hummus (vegan + gluten free)

easy peasy lemon squeezy hummus (vegan + gluten free)

This is one of my go-to snack preps for the week – I love making my hummus at home. Why?

  • It’s so much better for you than most store bought hummus options. Have you ever read the ingredient labels? Often times they have unnecessary preservatives, fillers and seed oils. It’s all about finding balance, but when you have the power to make something in less than 10 minutes that’s so much better for you, why not?
  • It’s budget friendly – you should have most of the ingredients in your cupboard, other than tahini! And if you really need to, you can skip the tahini and add more olive oil and lemon juice for flavour.
  • It’s SO much tastier!

This is one of the most simple hummus recipes out there and you can tweak to your preference 🙂

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/4 cup tahini tahini is like the sesame seed version of peanut butter. It comes in a jar and is usually by the herbs and spices!
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp minced garlic I generally prefer using minced or fresh garlic, but if you're in a pinch you can also substitute this with 1/4 tsp dried garlic
  • 1/2 tsp salt
  • small splash water to help blend, if needed; usually about 2 tbsp max

Optional add-ins

  • 1 tsp chili flakes
  • 1 tsp paprika
  • 1 tsp sesame seeds
  • Any other seasoning you love!

Instructions

  • Blend ingredients together in blender or food processor, adding water only if needed to help the blending process.
  • Blend any optional ingredients into the hummus or use as toppings (as shown in the picture and video).
  • Love serving these with veggie crudites (anyone else obsessed with carrot and cucumber sticks?! Also love snap peas and celery!), crackers, spread on wraps or as a salad topping! Hope you love it 🙂
