PSA to anyone who hasn't tried tahini cookies before – you NEED to try them! This is a healthy, sweet + salty alternative to your classic chocolate chip – wholesome ingredients with no added sugars + the perfect chewyness 🙈
Ingredients
Dry ingredients
- 1 cup rolled oats I used jumbo rolled oats but any type will work, it will just change the texture
- 1/2 cup almond flour life hack – ground up your almonds in a blender or food processor!
- 1/2 tsp baking soda
- sprinkle of salt
Wet ingredients
- 1/2 cup tahini
- 1/4 cup maple syrup, honey or agave nectar
- 1/2 cup medjool dates
Instructions
- In a large mixing bowl combine dry ingredients.
- Add in tahini and maple syrup.
- Chop medjool dates into small pieces (about 1/2 centimetre) and fold into the cookie dough evenly.
- Heat oven to 350F/180C and cover large baking tray with parchment paper.
- Scoop about 2-3 tbsp of dough onto cookie sheet, with space between each cookie. Bake for 10 minutes or until golden brown on the edges. You can keep them in an extra 2 minutes if you want them a bit crispier on the inside – but I like mine slightly chewy 🙂
