vegan + gluten free pumpkin spice energy bites
Need something to do with leftover pumpkin? try these vegan + gluten free pumpkin spice energy bites 🙂
Ingredients
- 2 cups oats
- 1/2 cup pumpkin puree
- 1/4 cup almond butter I love the flavour of almond butter with the pumpkin spice, but another nut butter will also do the job 🙂
- 1/4 cup pumpkin seeds
- 1/4 cup chia seeds
- 1/2 cup honey
- 1 tsp cinnamon*
- 1/2 tsp ground nutmeg*
- 1/2 tsp ground cloves*
- 1/4 tsp ground ginger* optional
Instructions
- In a large mixing bowl combine all ingredients evenly.
- Roll into small balls, about 1 inch in diameter – you should be able to make about 14-16! Place in airtight container.
- Refrigerate overnight or freeze for a couple hours until set. You can store refrigerated or frozen 🙌🏻
Notes
You can substitute the cinnamon, nutmeg, cloves and ginger for about 2 tsp of pumpkin spice seasoning
