super simple fruit + nut granola (vegan + gluten free)

Ingredients
Dry ingredients
- 4 cups jumbo rolled oats organic if possible
- 1.5 cups nuts + seeds of choice I used 1/2 cup almonds, 1/2 cup cashews + 1/2 cup pumpkin seeds
- 1 tsp cinnamon
- 1/4 tsp salt
Wet ingredients
- 1/2 cup maple syrup, agave nectar or honey
- 1/2 cup melted coconut oil to melt, measure coconut oil and put in small bowl. microwave for about 30 seconds or until fully melted.
Other
- 1/2 cup dried fruit of choice I used cranberries. Raisins, dates and dried apricots are also amazing!
Instructions
- Combine dry ingredients
- Add wet ingredients to the dry mixture
- Heat oven to 350F / 180C.
- Spread parchment paper on large baking tray. Add granola and spread evenly – it should be spread pretty thin across the surface. Depending on the size of your tray, you may need to use another one so that it all cooks evenly.
- Bake for about 15 minutes until golden brown. Keep in an extra 5 minutes if needed. Keep an eye on the oven and be careful not to overcook!
- Once baked, add dried fruit and mix evenly.
- Serve! Amazing by itself as a snack, with almond milk, on top of a smoothie or on a yoghurt bowl with fresh fruit 🙂
