Ingredients
  

Dry ingredients

  • 1 1/2 cups gluten free oat flour simply grind oats in high speed blender or food processor until they reach a fine texture
  • 2 tsp baking bowder
  • 1 tbsp cinnamon
  • 1/2 tbsp ginger ground or grated
  • 1/4 tsp salt

Wet ingredients

  • 1 1/2 cups almond or other dairy-free milk
  • 1 1/2 tbsp molasses, maple syrup or honey
  • 1 1/2 tbsp coconut oil melted
  • 1/4 cup brown sugar

Optional toppings

  • Coconut flakes
  • Walnuts
  • Maple syrup

Instructions
 

  • Combine dry ingredients in large mixing bowl
  • Combine wet ingredients in medium mixing bowl
  • Add wet ingredients to dry ingredients and combine
  • Heat pan on low-medium heat. Once hot (and in between each pancake, as needed), add about 1/4 tsp coconut oil.
  • Add about 1/4 – 1/3 cup of batter to the pan and let pancake cook for 3-5 minutes or until little bubbles have started to pop.
  • Flip to other side and cook for about 2 more minutes or until cooked through.
  • Repeat for each pancake and enjoy!
