These vegan + gluten free gingerbread pancakes makes the ultimate cozy winter morning breakfast!
Ingredients
Dry ingredients
- 1 1/2 cups gluten free oat flour simply grind oats in high speed blender or food processor until they reach a fine texture
- 2 tsp baking bowder
- 1 tbsp cinnamon
- 1/2 tbsp ginger ground or grated
- 1/4 tsp salt
Wet ingredients
- 1 1/2 cups almond or other dairy-free milk
- 1 1/2 tbsp molasses, maple syrup or honey
- 1 1/2 tbsp coconut oil melted
- 1/4 cup brown sugar
Optional toppings
- Coconut flakes
- Walnuts
- Maple syrup
Instructions
- Combine dry ingredients in large mixing bowl
- Combine wet ingredients in medium mixing bowl
- Add wet ingredients to dry ingredients and combine
- Heat pan on low-medium heat. Once hot (and in between each pancake, as needed), add about 1/4 tsp coconut oil.
- Add about 1/4 – 1/3 cup of batter to the pan and let pancake cook for 3-5 minutes or until little bubbles have started to pop.
- Flip to other side and cook for about 2 more minutes or until cooked through.
- Repeat for each pancake and enjoy!
