vegan + gluten free cauliflower mashed potatoes
Save for a super easy side – perfect for a big meal or for everyday meal prep 🙂
Ingredients
- 2 heads cauliflower leaves and large stalk removed
- 3 tbsp olive oil
- 2 tbsp almond or other non-dairy milk
- 1 tbsp lemon juice
- 1 tsp minced garlic
- 1 tsp dried rosemary
- salt + pepper to taste
Instructions
- Prep cauliflower by washing and cutting into small florets.
- Bring a large pot of water to a boil and add cauliflower. Cover with lid and let cook on medium heat for 10-15 minutes or until soft.
- Drain cauliflower of excess water and return cauliflower to pot without any heat.
- Puree cauliflower using a handheld processor. If you do not have one, you can also use a blender or food processor, or mash with a fork.
- Once cauliflower is completely mashed, add all other ingredients and bring pot to low heat for about 5 minutes. Stir constantly to avoid burning.
- Serve! I love to sprinkle mine with some extra rosemary and pumpkin seeds.
