Easy fall/winter dessert that's both vegan and gluten free!
Ingredients
Dry ingredients
- 1 1/3 cup oat flour
- 1 tbsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1/2 tsp baking soda
- 1/4 tsp salt
Wet ingredients
- 1/3 cup pumpkin puree
- 1/2 cup maple syrup, honey or agave nectar
- 1/2 cup almond butter
Mix-in
- 1/2 cup dark chocolate chips or pieces
Instructions
- Combine dry ingredients in large mixing bowl.
- Add wet ingredients to dry and mix.
- Fold chocolate chips in.
- Line large baking sheets with parchment paper and heat oven to 350F/180C.
- Take about 2 tbsp of cookie dough and roll into small balls. Place them on parchment paper covered baking sheet about 2 inches apart and gently press down. Mine were about 1/4 inch thick – this will make a chewy cookie! Press down a little more for something crispier.
- Optional: Add extra chocolate chips on top by lightly pressing 2-3 down on top of each cookie.
- Bake for 10-12 minutes or until golden brown. Keep them in 12-14 minutes if you like 'em crispy.
- Let cookies cool completely before removing from trays. ENJOY! 🙂
