Ingredients
  

Dry ingredients

  • 2 cups oats
  • 1 cup walnuts or pecans
  • 1/2 cup pumpkin seeds
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1/2 tsp ginger
  • 1/2 tsp salt

Wet ingredients

  • 1/4 cup maple syrup, honey or agave nectar
  • 1/3 cup melted coconut oil
  • 1/2 cup pumpkin puree I use the type that comes in a can 🙂

Instructions
 

  • Combine dry ingredients
  • Add wet ingredients
  • Line large baking sheet with parchment paper and spread granola evenly on pan
  • Bake at 350F/170C for 20 mins – keep an eye on it so it doesn't get too crispy 🙂 Leave in for a little longer if not crispy enough after 20 mins
  • ENJOY 🙂 Use as a smoothie topper, yoghurt topper, oatmeal topper, have with some milk as a cereal, by itself as a snack, bottle some up in little jars for gifts… the possibilities are endless 🙂
