Vegan + gluten free five ingredient tigernut energy bites
Simple, easy + healthy snack for on-the-go made using only FIVE ingredients! Perfect for Sunday meal prep 🙂
Ingredients
- 1 cup tigernut flour I love using tigernut flour because it is vegan, gluten free and naturally sweet. However, you can easily substitute this for another gluten free flour of choice (e.g. oat flour or almond flour)
- 1/2 cup shredded coconut Plus extra for rolling
- 2/3 cup almond butter Any other nut butter will also work!
- 1/3 cup honey, maple syrup or agave nectar
- 1/2 tsp cinnamon

- 12 whole raw almonds for topping
Instructions
- To a mixing bowl, combine tigernut flour, shredded coconut, almond butter, honey and cinnamon.
- Roll dough into approximately 12 one-inch balls.
- To a small bowl, add 1/4 cup coconut flakes. Gently roll each ball in coconut flakes and place in container. If you'd like, press one almond into the top of each ball.
- Cover and refrigerate for one hour.
Notes
To store, keep refrigerated in airtight container for up to two weeks.
