These vegan and gluten free blueberry breakfast bars are so easy to make, have the perfect amount of ooey gooey chewiness and will make you look forward to getting out of bed each morning 🙂
Ingredients
Crust
- 1 1/2 cups oat flour I just take normal oats and then blend!
- 1 1/4 cups rolled oats
- 1/3 cup maple syrup, honey or agave nectar
- 1/3 cup melted coconut oil To melt, I simple heat up in microwave for 30 seconds (or until fully melted)
- 1/2 tsp salt
Chia jam
- 2 cups fresh or frozen blueberries any other berry (or combination of berries) would also work great!
- 3 tbsp maple syrup, honey or agave nectar
- 2 tbsp lemon juice
- 2 tbsp chia seeds
Instructions
- In a large mixing bowl, combine the crust ingredients until evenly mixed.
- Spread about 1 3/4 cup of the crust mixture evenly over an 8×8 inch parchment paper covered pan (we'll save the rest of the crust as a topping at the end!)
- On low / medium heat, combine the chia jam ingredients and cook for 3-4 minutes.
- Mash the blueberries, and let the chia jam simmer for another 5 minutes before removing from heat.
- Pour the blueberry chia seed jam evenly over your prepared crust.
- Sprinkle your remaining crust on top – note that it will not fully cover the top.
- Bake at 350F / 180C for about 20 minutes or until golden brown.
- Let the breakfast bars cool completely before slicing. Enjoy!
Notes
Keep refrigerated in a covered container for up to one week.
