blueberry banana oatmeal bread (vegan + gluten free)
Level up your next banana bread with this vegan and gluten free blueberry special! This bread makes the perfect on-the-go breakfast, snack or dessert 🙂
Ingredients
Dry ingredients
- 1 1/4 cup rolled oats
- 1 cup oat flour you can buy oat flour from the store, or add oats to blender/food processor and blend until it reaches a fine, flour-like texture
- 1/4 cup almond flour you can buy almond flour from the store, or add almonds to blender/food processor and blend until it reaches a fine, flour-like texture
- 1/3 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Wet ingredients
- 2-3 bananas 2 large or 3 small/medium bananas
- 1/4 cup almond or other non-dairy milk
- 1/4 cup melted coconut oil to melt, add 1/4 cup coconut oil to small bowl and heat in microwave for about 60 seconds
- 1/2 tbsp cinnamon
- 1 cup blueberries fresh or frozen
Instructions
- In a large mixing bowl, combine dry ingredients
- In a separate bowl, mash 2-3 bananas
- Add mashed bananas and almond milk, coconut oil and cinnamon to dry ingredients. Mix well.
- Fold in blueberries.
- Lightly grease a loaf tin with coconut oil (including sides), or line a loaf tin with parchment paper.
- Add batter to loaf tin. Add any extra optional blueberries and/or oats on top.
- Bake at 350F/180C for 45-50 minutes or until golden brown. A good test is to stick a fork in and see if it comes out clean (i.e. no wet residue).
- Let the bread cool before slicing and serving! I recommend keeping this in the fridge so this lasts longer. Enjoy!! 🙂
