Carrots are a great source of beta carotene which helps promote immune function and supports healthy skin! These are great as a snack or side – I love them with edamame hummus inspired by Cookie + Kate! They would also taste great with my easy peasy lemon squeezy hummus 🙂

Carrots are a great source of beta carotene which helps promote immune function and supports healthy skin! These are great as a snack or side – I love them with edamame hummus inspired by Cookie + Kate! They would also taste great with my easy peasy lemon squeezy hummus 🙂
Ingredients
- 6-8 carrots
- 2 tbsp olive oil
- 2 tsp paprika
- sprinkle of salt and pepper
Instructions
- Cut 6-8 carrots into slim fry shapes. No need to peel unless you want to! The skinnier the fry, the crispier they will be.
- Add carrots to a large mixing bowl and combine with olive oil, paprika, salt and pepper
- Heat oven to 425F/220C
- Cover a large baking sheet with parchment paper and spread carrots evenly
- Bake for 20-25 minutes – I recommend turning them halfway through (flipping the carrots over and turning the tray around) so they cook evenly.
- Serve! 🙂
