Simple, crunchy and packed with protein – this has quickly become one of my meal prep staples 🙂
Ingredients
Dry ingredients
- 1 cup rolled oats
- 1/2 cup uncooked quinoa
- 1/2 cup chopped, ground or whole almonds
- 1 tbsp shredded coconut
- 2 tsp cinnamon
- 1/4 tsp salt
Wet ingredients
- 3 tbsp coconut oil
- 1/4 cup maple syrup, agave nectar or honey
Instructions
- Mix together your dry ingredients.
- Add your wet ingredients. If you like your granola more sticky / clumpy, add an extra tablespoon of melted coconut oil and be more generous with your honey / syrup.
- Spread mixture evenly on parchment paper covered pan and bake at 350F/180C for 15-20 minutes or until golden brown. You’ll want to keep a close eye on your oven as granola can burn very easily (especially when we use coconut oil)! I’d start watching the oven around 10 minutes in. With granola i feel it’s always best to take it out too early than too late (charcoal oats do not taste great trust me 🤪)!
- Serve! Let cool completely before storing in an airtight container for up to three weeks.
