plant based pumpkin spice granola (vegan + gluten free)

Ingredients
Dry ingredients
- 2 cups oats
- 1 cup walnuts or pecans
- 1/2 cup pumpkin seeds
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp ginger
- 1/2 tsp salt
Wet ingredients
- 1/4 cup maple syrup, honey or agave nectar
- 1/3 cup melted coconut oil
- 1/2 cup pumpkin puree I use the type that comes in a can 🙂
Instructions
- Combine dry ingredients
- Add wet ingredients
- Line large baking sheet with parchment paper and spread granola evenly on pan
- Bake at 350F/170C for 20 mins – keep an eye on it so it doesn't get too crispy 🙂 Leave in for a little longer if not crispy enough after 20 mins
- ENJOY 🙂 Use as a smoothie topper, yoghurt topper, oatmeal topper, have with some milk as a cereal, by itself as a snack, bottle some up in little jars for gifts… the possibilities are endless 🙂
