Ingredients

Dry ingredients

  • 1 1/3 cup oat flour
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet ingredients

  • 1/3 cup pumpkin puree
  • 1/2 cup maple syrup, honey or agave nectar
  • 1/2 cup almond butter

Mix-in

  • 1/2 cup dark chocolate chips or pieces

Instructions

  • Combine dry ingredients in large mixing bowl.
  • Add wet ingredients to dry and mix.
  • Fold chocolate chips in.
  • Line large baking sheets with parchment paper and heat oven to 350F/180C.
  • Take about 2 tbsp of cookie dough and roll into small balls. Place them on parchment paper covered baking sheet about 2 inches apart and gently press down. Mine were about 1/4 inch thick – this will make a chewy cookie! Press down a little more for something crispier.
  • Optional: Add extra chocolate chips on top by lightly pressing 2-3 down on top of each cookie.
  • Bake for 10-12 minutes or until golden brown. Keep them in 12-14 minutes if you like 'em crispy.
  • Let cookies cool completely before removing from trays. ENJOY! 🙂
