Ingredients
  

  • 8 tbsp chia seeds
  • 2 cups coconut milk light, canned. another non-dairy milk will also work.
  • 4 tbsp shredded coconut
  • 2 cups strawberries fresh or frozen
  • 2 tbsp lemon juice
  • 8 tbsp coconut yoghurt another non-dairy yoghurt is also fine

Instructions
 

  • Add 2 tbsp chia seeds each to four mini jars.
  • Add 1/2 cup coconut milk to each jar, then add in 1 tbsp shredded coconut each. Combine.
  • Refrigerate chia seed mixture overnight, ideally stirring after the first hour or two to mix chia seeds together so they don't stick.
  • For the topping, heat strawberries and lemon juice on low heat until strawberries begin to melt. mash with fork or use immersion blender to puree to desired thickness.
  • Take chia seed jars out of the fridge. Add a couple tablespoons of coconut yoghurt to each, before topping with strawberry puree. Keep refrigerated and enjoy 🙂
