Simple, delicious + healthy quinoa salad with a light lemony dijon vinaigrette 🤍 this is one of my go to meal preps for the week – so easy to make a big batch + bring for lunches or have ready made dinners at the ready!
Ingredients
Salad
- 2 cups cooked quinoa about 2/3 cup dry quinoa
- 2 cups spinach
- 1 small red bell pepper, diced
- 2/3 cup cucumber, diced
- 1/2 cup cooked chickpeas, drained and rinsed
- 1/2 cup baby tomatoes, sliced in half or diced
- 1 small avocado, cubed optional
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp dijon mustard
- 1/2 tsp minced garlic
- 1/2 tsp dried basil I also love adding a handful of fresh basil into the salad itself if you have it on hand!
- sprinkle of salt and pepper
- 1-2 tbsp honey or maple syrup optional – only add if you prefer a bit of sweetness, personally I don't think it's necessary!
Instructions
- Prep the quinoa according to instructions on packet; aka bring about 1 1/3 cups of water to boil and then add 2/3 cup quinoa. Reduce to simmer and let cook for about 10 mins or until all the water has been absorbed. Regardless of how much quinoa you want to cook you need about a 2:1 ratio of water to quinoa when cooking.
- Combine dressing ingredients.
- Combine salad ingredients, adding the quinoa last once it has completely cooled (otherwise it will wilt the spinach).
- Add dressing to salad and toss to combine. Enjoy!
