Here’s a super easy vegan and gluten free meal prep idea! Love prepping a salad to have at hand throughout the week for packed lunches – also love this for summer picnics or days at the beach (but it can be enjoyed at any time of year!)

All ingredients can be adjusted and substituted depending on personal preference (or what’s in your fridge…) 🙂

Ingredients
  

Salad

  • 1 1/2 cups spinach
  • 1/3 cup diced red apple
  • 1/4 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/4 cup cooked beetroot, sliced the type that comes in vacuum-sealed packs, no vinegar
  • 1/3 cup cooked quinoa
  • 1/4 cup walnuts pecans, pumpkin seeds, sunflower seeds or almonds would also work great 🙂

Dressing

  • 2 tbsp olive oil
  • sprinkle of salt + pepper

Instructions
 

  • Combine ingredients in one large bowl and mix well. Alternatively, you can separate the ingredients and serve as is (as shown in the picture)
  • Drizzle with olive oil, then sprinkle with salt + pepper. Enjoy!
