Ingredients
  

  • 2 heads cauliflower leaves and large stalk removed
  • 3 tbsp olive oil
  • 2 tbsp almond or other non-dairy milk
  • 1 tbsp lemon juice
  • 1 tsp minced garlic
  • 1 tsp dried rosemary
  • salt + pepper to taste

Instructions
 

  • Prep cauliflower by washing and cutting into small florets.
  • Bring a large pot of water to a boil and add cauliflower. Cover with lid and let cook on medium heat for 10-15 minutes or until soft.
  • Drain cauliflower of excess water and return cauliflower to pot without any heat.
  • Puree cauliflower using a handheld processor. If you do not have one, you can also use a blender or food processor, or mash with a fork.
  • Once cauliflower is completely mashed, add all other ingredients and bring pot to low heat for about 5 minutes. Stir constantly to avoid burning.
  • Serve! I love to sprinkle mine with some extra rosemary and pumpkin seeds.
