Ingredients
- 1 large block extra firm tofu 450g, drained (lightly wrap in towels a couple times to drain out excess moisture); I recommend buying organic tofu where possible
Marinade
- 1/4 cup light soy sauce
- 1/2 cup water
- 1 tbsp dried onion
- t tsp dried or minced garlic
- 1 tsp paprika
Batter
- 1/2 cup almond or other non-dairy milk
- 1 tbsp apple cider vinegar
Coating
- 1 cup oat flour simply blend oats in blender or food processor until they reach a flour-like texture
Crispy layer
- 1 cup crushed pop chips I used Good & Honest sweet chili flavour – anything similar will do! To crush, I recommend placing them inside a zip tight bag and rolling over them with a rolling pin. Whatever works best for you!
- 1 tsp paprika
- 1/2 tsp dried or minced garlic
Instructions
- Slice a large block of extra firm tofu into 1 inch cubes.
- Combine marinade ingredients in a medium bowl.
- Let tofu soak in marinade for 20 minutes while you prep the rest.
- Combine batter ingredients in small bowl and set aside.
- Place oat flour in a small bowl and set aside.
- Combine crispy layer ingredients in medium bowl.
- Prep the nuggets! Toss tofu pieces in this order: (1) oats, (2) batter, (3) oats (yes, you do this twice!), (4) batter and (5) crispy layer. Don't be afraid of getting a little messy 🙂
- Place your nuggets on a parchment lined baking sheet and bake at 400F / 200C for 20-25 minutes or until as crispy as you'd like 'em to be!
