vegan + gluten free tigernut apple crumble

Apple crumble is one of my all time favourite desserts – so easy and so simple to make! Here’s one of my fave recipes baked using tigernut flour for extra fibre + natural sweetness 💕

Ingredients
  

Apple base

  • 8 small / medium apples
  • 2 tbsp lemon juice
  • 1 tbsp cinnamon

Topping

  • 1 cup tigernut flour you can also substitute this for almond flour or another gluten free flour of choice
  • 1 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 cup walnut pieces
  • Sprinkle of salt
  • 1/2 tbsp cinnamon
  • 1/2 cup coconut oil

Instructions
 

  • Dice apples into small cubes. No need to peel unless you would like to.
  • Combine apples with lemon juice and cinnamon. Set aside.
  • In a large mixing bowl combine topping ingredients.
  • Heat oven to 350F/180C.
  • Spread apples evenly on 8 inch pie pan. An 8×8 inch tray would also work! I’ve also spread this onto two loaf pans for a thicker crumble. 
  • Spread crumble mix evenly on top of apples. 
  • Bake for about 40 minutes or until golden brown. I recommend checking in every 5 minutes or so once you hit the 30 minute mark. ⏱ 
  • Let the crumble cool and enjoy! Delicious on its own or with yogurt or ice cream 🙂
