vegan + gluten free tigernut apple crumble
Apple crumble is one of my all time favourite desserts – so easy and so simple to make! Here’s one of my fave recipes baked using tigernut flour for extra fibre + natural sweetness 💕
Ingredients
Apple base
- 8 small / medium apples
- 2 tbsp lemon juice
- 1 tbsp cinnamon
Topping
- 1 cup tigernut flour you can also substitute this for almond flour or another gluten free flour of choice
- 1 cup rolled oats
- 1/4 cup brown sugar
- 1/2 cup walnut pieces
- Sprinkle of salt
- 1/2 tbsp cinnamon
- 1/2 cup coconut oil
Instructions
- Dice apples into small cubes. No need to peel unless you would like to.
- Combine apples with lemon juice and cinnamon. Set aside.
- In a large mixing bowl combine topping ingredients.
- Heat oven to 350F/180C.
- Spread apples evenly on 8 inch pie pan. An 8×8 inch tray would also work! I’ve also spread this onto two loaf pans for a thicker crumble.
- Spread crumble mix evenly on top of apples.
- Bake for about 40 minutes or until golden brown. I recommend checking in every 5 minutes or so once you hit the 30 minute mark. ⏱
- Let the crumble cool and enjoy! Delicious on its own or with yogurt or ice cream 🙂
