Ok so first off, this recipe was clearly inspired by Baked by Melissa’s green salad which BLEW up on TikTok last summer. But I’ve adapted it so it’s boiled down to the essential ingredients with some updates to make it even better than it already was. Seriously, if you haven’t tried this yet you need to go to the store and buy what you need to make this TODAY. It’s that good 🙂

I love having this with a side of homemade tortilla chips so I’ve also included that recipe below!

Ingredients
  

Dressing

  • 1 cup spinach
  • 1 cup fresh basil don't skip the fresh basil!!
  • 1 tsp minced garlic
  • 2 lemons, juiced
  • 1/4 cup olive oil
  • 1/4 cup cashews can substitute with 1/4 cup plain tofu or omit, but your dressing won't be as creamy
  • 1/2 tsp salt
  • 2 tbsp white wine or apple cider vinegar

Salad

  • 2 cups chopped green cabbage or another salad/green of choice
  • 1/2 cup diced cucumber
  • 1/4 cup green onions green onions are delicious so don't leave them out 🙂

Optional

  • 3 small soft gluten free corn tortillas you can also use store-bought tortilla chips
  • sprinkle of salt

Instructions
 

  • Add dressing ingredients to a blender or food processor and blend until totally combined.
  • Add salad ingredients to a large bowl.
  • Add dressing to the salad, combine and serve!

Optional: homemade tortilla chips

  • Love adding homemade tortilla chips to this – they're so easy to make and taste DELICIOUS 🙂 Simply use a pizza slicer or other sharp knife to cut your tortillas into what looks like pizza slices.
  • Then, spread evenly on a large baking sheet. Bake for about 5 minutes at 350F/180C. Turn over and sprinkle with a little salt, and bake for another 5-10 minutes until golden brown.
