vegan + gluten free valentine’s cookies (raspberry linzer cookies)
The cutest little cookies just in time for Valentine's Day 🙂
Equipment
- 2 heart cookie cutters one larger, one smaller. You can also use a large circle cutter with a mini heart in the middle!
Ingredients
- 2 1/4 cup gluten free (or normal) flour
- 1/2 tsp baking powder
- sprinkle of salt
- 1 flax seed egg 1 tbsp ground flax seed mixed in 3 tbsp water
- 3/4 cup vegan butter do not use coconut oil as a replacement – it didn't work 🙁
- 3/4 cup golden caster sugar
- about 1 cup jam of choice – raspberry or strawberry work great for Valentine's Day 🙂
Instructions
- Prep flax seed egg by combining ground flax seed with water. Set aside for at least 5 minutes to set.
- In a large bowl, combine flour, baking powder and salt. Set aside.
- In a medium bowl, combine butter and sugar. Then add in your flax seed egg.
- Add the butter, sugar and flax seed mixture to your flour mixture in the large bowl. Combine and knead until a dough is formed. Add a drop of water or a little extra butter if your mixture looks too dry.
- Roll dough on parchment paper covered baking tray to desired thickness (about 1/4 inch thick). Refrigerate for about 20 minutes to firm up.
- Remove from fridge and cut hearts using your large heart shaped cookie cutter. Once you have cut all of the large hearts, in half of them, cut out a smaller heart in the centre – this is where the jam will peek through when you layer the two pieces together 🙂
- Bake at 350F/180C for about 10 minutes until they start to turn a very light golden colour.
- Once cookies have cooled, spread jam onto your bottom layer cookie pieces. Try to stay away from the very edges to avoid making a mess when you put the top layer on!
- Add the cut out shapes to the top and voila, your cute little valentines cookies are ready to be eaten 🙂
